Ingredients

  • 1 large free range chicken breast
  • 1 tablespoon Soy sauce (gluten free)
  • 1 teaspoon honey
  • 1 tablespoon Pickled ginger
  • 1/2 Avocado
  • ½ Lebanese cucumber
  • ½ cup brown or white rice
  • 1/3 cup Edamame
  • ½ cup Cabbage shredded
  • 1 Carrot Shredded
  • 1 Teaspoon Chili mayo

Method

  • STEP 1– Dice chicken breast and marinate in a bowl with soy sauce and honey for 2 minutes
  • STEP 2– Cook ½ cup brown or white rice
  • STEP 3– Cook marinated chicken breast for 8-10 minutes on frying pan (until cooked)
  • STEP 4– Blanch Edamame in boiling water for 2 minutes (or until cooked) and drain
  • STEP 5– Shred Carrot and cabbage and dice avocado and cucumber
  • STEP 6– Place all ingredients in a large bowl, drizzle a small amount of chili mayo on top.
