Ingredients
- 1 large free range chicken breast
- 1 tablespoon Soy sauce (gluten free)
- 1 teaspoon honey
- 1 tablespoon Pickled ginger
- 1/2 Avocado
- ½ Lebanese cucumber
- ½ cup brown or white rice
- 1/3 cup Edamame
- ½ cup Cabbage shredded
- 1 Carrot Shredded
- 1 Teaspoon Chili mayo
Method
- STEP 1– Dice chicken breast and marinate in a bowl with soy sauce and honey for 2 minutes
- STEP 2– Cook ½ cup brown or white rice
- STEP 3– Cook marinated chicken breast for 8-10 minutes on frying pan (until cooked)
- STEP 4– Blanch Edamame in boiling water for 2 minutes (or until cooked) and drain
- STEP 5– Shred Carrot and cabbage and dice avocado and cucumber
- STEP 6– Place all ingredients in a large bowl, drizzle a small amount of chili mayo on top.
